Generally speaking, packages like "lubuntu-desktop" or "ubuntu-desktop" are meta-packages:
https://help.ubuntu.com/community/MetaPackages It's generally OK to remove a meta-package but you must know what you're doing to some degree. For instance I could remove 'lxterminal' but if I did so prior to installing another terminal I'd be pretty well up a creek w/o a paddle.
