I used ffmpeg as command line tool to record my desktop. On my early videos I also used recordmydesktop which works fine aswell.

For recording Skypecalls I recommend the skypecallrecorder. 

For screencast i normally have a sheet of paper lying next to me with all the main topics that I want to show or discuss in the video.
But freely talking in the video needs practice to work good. 

Finally I would recommend to edit the video with either kdenlive or openshot. Normalizing the audio to make it loud enough is also important.
