The same problem with Evince you report is a bug reported here:

Just in case you want to use Evince again; the following *simple*
workaround a little down that same page does work (use it myself):

Add this file
~/.config/gtk-3.0/gtk.css
.menu {
border: 2px solid DarkSlateGray;
background: #EDEDED;
}
