The project that I've long hoped someone would take on is building a Lucene-based site search application that requires no code. I imagine this as a webapp that you can drop into your server, then visit some JSP pages to configure it: telling it what urls to crawl, how often to crawl, how result pages should look, etc. This would bring Lucene to a much larger audience.
