when i index i use the Field.Text, do you mean that i should use Field.Keyword instead
When you use Field.Text, the terms split out and actually indexed are very likely numerous for that field. Sorting has no idea which term you intend to sort on since there are multiple for that field.
So, yes, you should use Field.Keyword (or at least an untokenized field - read the sorting Javadocs for more details) for fields you wish to sort by.

I only have one term, this is the sample code (where sortfield is a fields that has been indexed):
hits = searcher.search(query, new Sort(sortField, false));
you mention Field.Keyword, what is that.

You may only have a single term for each document. How is the field indexed you're sorting by? Field.Keyword is the only guaranteed safe one, and your analyzer will determine how the other fields are treated.
