Install rinetd
make it redirect port 81 on the firewall to port 80 on the exchange box
then from the outside all someone has to enter is 


I have that setup working well at a number of locations.

Or you could do the opposite.
If your firewall does not have important things (to a non-admin) running on port 80
then in the httpd.conf file move the apache to port 81
make rinetd forward port 80 to the exchange server (don't forget to adjust firewall rules accrodingly)

then from the outside just do http://yourdomain/exchange/
