Hello Stephen, First off do you have streaming software running on your centOS box? There are a couple of streaming software that you can build on your server and keep your streams there, then that way, you can be able to use VLC or any other media player to listen to your streams.
The list of streaming software that you can build on your server is quite big, you just need to look. Examples; - Icecast [Preferably Icecast2] - Darwin Streaming Server [ Works well with Quicktime] Once the software is built, it is easy then to connect to your streaming server with your VLC.
