Simply put, a SIP trunk is a link that can carry multiple 
SIP conversations to different extensions. You can implement this 
between your SIP server/softswitch to other SIP servers or to a VoIP SP 
or another SIP capable IP PBX. 

VoIP on the other hand is the 
technology of carrying voice (which use to be carried traditionally over the  
PSTN or GSM) 
over an Internet protocol (IP) link. Basically encapsulating voice 
packets within IP headers, then transport them over an IP network.

Note that the term VoIP can sometimes be used in a generic way to refer even to 
Voice over FrameRelay (VoFR) or ATM.
