you have two options as far as I can see. 1) install afresh and migrate the 
email using imapsync. 2) use some kind of tool to convert the physical server 
to a virtual one. I suggest that you do it over a weekend and after hours. we 
have the number of a good pizza place that delivers!

Subject: [LUG] Mail server Migration
Hello Lug,
Recently we decided to go virtualization (VMware vSphere 4) on all
servers but am facing a challenge of migrating the mail-server from a
standalone server to the new server that has been virtualized.i have
over 180 users and i don't want to lose any data in the process. Am
running Centos 5.5, postfix and dovecot. What do i do to migrate the
mails to the new server without any data loss or users noticing a
change? Advise please
