G.Y.M, SME is quite compact & stable so far the releases I have worked with
though not as flexible.
The latest release is 8.0 Beta but 7.5.1 is available for download online
although any release you have as long as the server accesses internet should
be able to access updates under Configuration > Software installer in the
right pane.

With the ISO burnt on a CD and necessary files backed up, the re-install
should not take you more than two hours.
During the install, choose "Server & Gateway" (I think). Does your server
has two NICs?

After successful installation & access configuration, use a browser to
https://ip_address/server-manager go to Configuration > Email and you should
be able to play with all the options on that page to your satisfaction.

Hope that is helpful enough. Luckily I have one of those installs on my
network as a file server so hit me for any unclear pointers.
