Hi Brian, I am not sure what you really expect, but I would talk to Prof. Dee Carabine and her team at Virtual University of Uganda (www.virtualuni.ac.ug). As far as I know that university runs on FOSS and cloud computing virtually for everything except mowing their lawn. Of course they are not a business but a CSR/Educational venture.
