Ubuntu has a built in PDF Printer so you print anything to PS/PDF. Otherwise LibreOffice/OpenOffice or any of the other Office suites should be able to help. What kind of documents are you trying to produce? Flyers, Letters, Posters. That might help us narrow down the list somewhat.
