Zentyal uses either plain old postfix or Zarafa for email, looks like Zarafa does have some kind of clustering/HA config, but you probably need to upgrade to the pro version. http://doc.zarafa.com/6.40/Administrator_Manual/en-US/html/_multi_server_setup.html
