I have used Sabayon [application not the Linux distro] to lock down and
customize gnome based sessions to limit the apps my users have access
to. I know sabayon is available in CentOS not sure about Ubuntu.

which only has access to a certain set of applications and won't have
the rights to change or add software, install browser plugins, etc.
I'd be happy to hear about networked solutions as well (a la public
library, internet cafe).
