A priori entre Sendmail y Postfix eligiría Postfix.
La IP dinámica se soluciona con dyndns, no-ip o algo así. Esos
servicios tienen un MX que cambia junto con la IP. Algunos caches DNS
suelen tardar en expirar el registro; Si tu ip cambia, smtp va a
diferir la entrega hasta que pueda conectarse con el smtp correcto.
Igual, sin mas datos de lo que necesitas lograr hay que hipotetizar
demasiado :)

quisiera saber si conocen algún servidor SMTP gratuito. Uso la classe
conocida como phpmailer y funciona, pero solo con mi propio servidor.
