You can import the 0.7-formatted zpools in zfs 2.1 without upgrading them; you just won't get all the benefits (and there are a lot) of 2.1 until you upgrade. So, you could run for a while with the old format until you're comfortable to upgrade them permanently. You can also take snapshots and back them up if you have space to do so.
