I once approached a luthier to do this and he advised me that the fingerboard shape 
and spacing was not able to be converted to Baroque tuning.  I'm not sure whether this 
was hard-sell to get a new new instrument, but it did result in a new instrument 
anyway.

Since so many lutes were converted to so many
different configurations historicaly, this sort of
thing seems like a good way to learn more about lute
construction. I have wondered how a 7c lute can evolve
into a 13c.
