In the US, some folks will use big shops like Luthiers Mercantile: <http://www.lmii.com/>. Not specifically lute, but a very knowledgeable tonewood supplier of some repute in the US is Bruce Harvie of Orcas Island Tonewoods: <http://www.rockisland.com/~tonewoods/>; he seems quite open to discussion of such stuff. Ideally, their tonewoods will be aged and ready to fly. I believe David Van Edwards did a little writing on the topic of wood shopping in association with his online lute building courses.
