Luthiers arent alone, other woodworkers also have to deal with humidity
issues.

An enclosed space (wooden box, closet, whatever) with one or more sources
of heat (incandescent light bulbs) can be gotten to a useful temperature
(100-120 degrees F) that will help to dry wood you want to work on.

You should be equiped to monitor the RH of the wood and the temperature of
the space.

It is important that the top be dryer when you glue on the ribs than it
will ever get in use; this keeps the topwood in compression and avoids
splits.  The topwood will swell as it takes on moisture, and the glue
joint will hold, keeping the top in compression.
