Presumably it is a reference to the church of St. Mary Overie which is
actually now the same as Southwark Cathedral which is dedicated to St.
Saviour and St. Mary Overie.  She  was the daughter of John
Overs  who ran a lucrative business
ferrying people accros the Thames in the 10th century..

Very interesting. This explanation does seem likely.

It is - and was - a very famous church although it didn't become a cathedral
until 1905.   It does have a peal of bells.

Pepys visited it and wrote about it..."I walked over the fields to
Southwark..., and I spent half an hour in Mary Overy's Church, where are
fine monuments of great antiquity, I believe, and has been a fine church."
Samuel Pepys - 3 July 1663.
