...that said, piranha is really just a wrapper around the Linux-HA
toolset which limits the config choices you have.

I'm not familiar with the Piranha GUI, but with nanny you can "quiesce"
a server (ie. set weight to 0) instead of removing it from service when
a check fails. It's the "-q" option.

As Joe mentions, you may need to ask on a Redhat mailing list to find
out how to use it. I'm damned if I can find it in the CentOS 5 piranha
documentation.
