Would you be able to create a  MediaWIki install there (which basically 
requires PHP 5.1 & MySQL 4.0)? That would be wonderful!

I have some server space at my webhost I can donate to the cause.  We should 
rsync with a couple different servers, so that if one goes down, we always have 
a backup.  If interested, I'll setup an account we can ftp into and let Kieran 
know the login/hosting details.

It's not a bad idea, but in terms of retrieving the content should the
worst happen, or for the original poster who just needs to access some
information while it's down, the google cache is pretty handy (click on
the "Cached" link below each returned result):
