lwIP does not route. That is, it does not know how to distribute traffic among interfaces beyond some simple rules. I don't know if you can switch default interfaces with sockets (connections) open... do you just switch or you bring it down and then up again ? Can you capture IP traffic on at least one of the interfaces ? That will paint a clearer picture.
