Oh, that will do nicely.  We'll just write an LXC start/stop script to
update the symbolic link on start/stop. That would seem like a great little
optional feature to build into lxc-start perhaps, too.

There is no such option.
You can enable containers to start automatically at boot time, see
/etc/lxc/auto/ .
