Right now you can find information like this in files README.md of the 
various components' GitHub repositories where these files represent some 
kind of homepage.
The URLs are https://github.com/lxde/some-component. Also, the wiki page 
about building from source is featuring an overview of all components 
[0] where these repositories are linked.

To some degree this is a matter of taste. The components in levels 0-II 
in the said overview can be considered essential. Also, you'll probably 
want to use lxqt-panel (otherwise one could stick with a window 
manager-only system, IMO) which depends on some of the components in 
level III.
As for all the rest you'll probably know what you want after reading the 
sources stated in the answer to question 2.

Should be no problem. I'm running latest VCS checkouts on both platforms 
about two years without any issues.

It's the default window manager, but others like KWin or Xfwm are 
working as well and covered by the wiki.

As a new user you may want to glance through the wiki [1]. It's far from 
perfect but does provide basic information like installation and 
configuration.
