O am using 2.5.x for daily work now for some time, and it is absolutely
stable.

Same here. The input methods are the thing that I am not sure about.
Suggestion: Do an RC2, but quickly, and do whatever we can to get major
testing of the input methods stuff. Then do the real release. If we need
to do a quick repackage on OSX to check a fix, we can beg Stefan to do
it. ;-)
