Well, started LyX, loaded my document, checked that I get \infty and \leq, that's it.
And it compiled of course ;-)
And the symbol fonts don't show up in FontBook, so I guess they are not installed globally.
Is that enough?
I do not like much the names of the new methods, but I do not have anything better to propose.
