Because some of us hate seeing wasted space between sentences :-)

Two spaces are not typographically correct, and thus should not be done.
Period. However, to satisfy your squashed sentence complaint, LyX could
have a setting to automatically make a sentence ending period have a wide
space after it, as TeX does. I can't believe this would be excessively
hard to implement (famous last words). This would satisfy the purists who
insist on one space, but satisfy those like you who prefer not seeing
everything crammed together. You should suggest this to the lyx-devel
mailing list rather than lyx-docs; we don't write any of the code, we just
try to figure out what the developers inflicted on us.
