Dear LyX documentation team,
we started a discussion in lyx-users and continued in private but
agreed to continue here in the lyx-docs list.
Please excuse the German quotations. Most of them are not vital for
understanding the topic. If required, I will provide translations.

After a survay of the documentation for LaTeX unicode support, I found
the distinction rather to be:
utf8: Unicode utf8 definitions of the LaTeX-package inputenc. Currently
only a limited range of characters (mainly for Latin scripts) is
supported.
utf8x: Unicode utf8 with based on the LaTeX package ucs (comprehensive,
including Latin, Greek, Cyrillic and CJK scripts)

I'd spell it as
utf8 is part of the LaTeX base system, sufficient for latin scripts
and maintained.
utf8x relies on the contributed "ucs" package, might not work
out-of-the-box but provides the wider coverage of unicode entries.
To quote

The simplest use of this package is to add
\usepackage{ucs}
\usepackage[utf8x]{inputenc}
to your header. You may even omit the first line in many cases. Often
however you need to load additional packages etc., see

I have in mind "occasional" users of Greek, like scientists, theologicans,
historians, philologicans and linguists. They usually write in their
mother tongue (using a Latin alphabet) and need only some word or quotes
to be in Greek (mainly polytonic Greek). I do not expect them to look under
Customization.

I agreee that the target is moving and a lot of the abovementioned traps
will (hopefully) dissapear once 1.6 released.
In this sense, a pointer to the Wiki seems "the right thing".
