For the general layout, use a french bst (frplain.bst for example) and
the associated style, have a look on CTAN.
So the reference syle will be « frplain » instead of « plain ».
For specific layouts as thesis denomination, the type = "...",
field of the theses description in the .bib database
allows a really appropriate citation. The only drawback, as I already
mentioned here, is that it makes the database depending unpon
the language of the document, which is not very sound unless
you keep the french style of the citation even in other languages than
French. A lot could be discussed about that, but I think that
this is not the place to raise a debate on that subject, as
it is really a bibTeX feature.
