I had the same problem when I started using LYX. But the answer
is quite easy. Just go to the menu:
"Layout" -> "Dokument..."
..and set "Kodierung" to "latin1".
Here you go :)
I also have set "Sprache" to "german".
If you want these settings any time you start LYX, go to:
"Layout" -> "Layout als Standard speichern"
