Okay, I have taken your local layout and created a new document with it. Now it works. In the attached file I have change the composition a bit to show how it works. Mainly, the appendix subsection needs to be inside the subappendices environment for latex to recognize it as an appendix.
However, it is not exactly what I was looking for. I don't want a new (sub)section layout. Rather I want to have the default layout change its numbering depending on whether it is inside a subappendices environment/inset. Similarly to how the "Document > Start Appendix Here" works.
But maybe your workaround is as good as it gets? /Daniel
