I've missed something, perhaps because I've not before used lualatex?

run in a terminal
fmtutil-sys --byengine=luahbtex
maybe that you need sudo
sudo fmtutil-sys --byengine=luahbtex
Are there error messages in the output? If not, then try again with
running the example.
