This would not be that difficult, using the information in the undo stack.

The difficult point is the key binding ;)
A suggestion?
I use g; all the time in Vim.

In LyX I use the sequence ctrl + z, ctrl + y to try to accomplish the same 
thing.

I've gotten so used to that.... In fact, you could just bind "command-sequence undo; redo" to whatever you like. But it's probably better to have a real LFUN.
