With regard to the title-changing in your BibTeX: That depends on your bibliographic style. If you know the style you need to use well enough, there's a great package out there called 'Makebst': See http://www.linmpi.mpg.de/english/services/software/latex/localtex/localltx.html#makebst
It allows you to customize your BST file as much or as little as you want. I've managed to make a closer Chicago-a-like than anything I've found online with it, which is good. It's also marginally customizable beyond the prompt level. (I can explain that if you really want me to.)
