1. Make a figure/table float as usual. 2. Put a minipage with the desired width in the float. (Make sure the minipage is inserted in "normal text", not "caption" text) 3. Put your figure/table and the caption text inside the minipage. Overly long captions will now break to that width.

This use of minipages also lets you put several figures besides each
other (or above each other) in the same float.  This because you
may have one caption per minipage.
Nice if you have thin figures or figures that belong together.
