Assuming the audience is typographically na�ve enough to not be able to 
distinguish Arial and Helvetica, \usepackage{helvet}
and
\renewcommand{\familydefault}{\sfdefault}

should do it---actually if you're using pdflatex, I think it will, 
'cause the font won't be embedded and they'll get Arial subbed in at 
their end.
