I asked this exact question a while back (a few months). look up the word \Gamma in the subjects...
I didn't end up solving this problem, but I do not think it is path related, since on my system the fonts are installed where any application can see them and other applications display the gamma and psi just fine, from the same exact fonts.
I didn't try switching to English. This suggests a specific problem with the Hebrew, but I don't know the answer...
