You don't need all classes listed in this menu. Many of them are special classes for publishing companies.
If you want to use a class that is at the moment unavailable in LyX, you have to install the corresponding LaTeX-package. E.g. if you want to use the class "article (elsevier)", you need the LaTeX-package "elsevier". You can install it manually or better by using your LaTeX distribution. As you are using Mac, I assume that you use Gerben Wierda's "teTeX". This distribution offers to install new packages, look at the teTeX-manual to find out how.
