Bennett, Good point. I did not look at the example, but am working from a template and the manual.
For example, from that file it's clear that \block requires using ERT to put the block title in curly braces: {Title}.
Aha! In retrospect that makes sense.
Itemized items can be nested using standard LyX command (Increase/Decrease Environment Depth). Your trouble may be that you have a pause in between; the pause "paragraph" must be indented in order for subsequent items to be indented as well. (Again, that this is the case becomes evident from studying the beamerpresentation.lyx file -- but it does take some detective work.)
