Select any .pdf file in the Finder. Select File > Get Info. Under the "Open With:" heading, select the .pdf viewer you want (i.e., Adobe Reader), and click on the "Change all..." button. Since LyX will just hand off the request to open the .pdf document to OS X, OS X will now open it with Adobe Reader.
