You didn't specify a LyX version, but I'm guessing 1.4.2 or 1.4.3. Right
click in some empty space on the main menu. This should bring up the
toolbar selection dialog. Put a check next to "Table". Then click
anywhere in a column you want to delete. The fourth button from the
left on the table toolbar should be "whack a column".

I never saw that before. LyX is quite powerful and useful. Been using it
for probably over five years, hundreds of hours of work and probably over
a couple hundred documents ... but I still have lots to learn.
This feature is new as of version 1.4.1 (I think). The mechanism for
adding/deleting rows/columns was different in 1.3.x.
Incidentally, you can jigger LyX so that the table toolbar shows
(automatically) only when your cursor is in a table. Edit the user
interface file you are using (default.ui) in my case. There is a
"Toolbars" section that list the toolbars. Changing the line for tables to
"table" "table,bottom"
causes the table toolbar to pop up (at the bottom of the screen)
whenever you are in a table. Obviously, the location can be moved
around by fiddling with the last argument. The line
"math" "math,bottom"
causes the math toolbar to pop up when you are in a math inset. This is
documented in the default.ui file, and I think it's rather slick. (No
idea if it's documented in the manuals; I'm too lazy to re-read them
when upgrades come out.) Incidentally, I put the modified file in the
ui folder under my user home, so that it would survive upgrades.
I know what you mean, by the way -- I periodically learn about something
in LyX I had never seen or used before, and they're not always newly
added features. Kind of like "easter eggs" (but more useful).
