1) If right clicking on a CharStyle assignment inside a float, the
name gets folded - as expected. However, this does not seem to "eat"
the right-click event, as afterwards the float option dialog appears,

This is a bug. Please report it.
2) Is there any command available to toggle the display of all
CharStyle assignments at once? As the display of CharStyle assignments
is not saved in the .lyx file (which is, IMHO, a good thing) one had
to manually fold each of them every time the document is re-opened...
There's a lot of discussion about this right now. My own view is that
CharStyles should be folded by default. You don't always need to see the
labels. In any event, the implementation of CharStyles is undergoing a
major overhaul for 1.6.
