Assuming you want them in math font (rather than upright) in the
bibliography, use the LaTeX macros for them (e.g., \gamma for lower case
gamma, \Gamma for upper case) and enclose them in dollar signs ($...$).
If you are using upper case, put braces ({...}) outside the dollar
signs; that protects against having the letters shifted to lower case if
your bibliographic style sets titles in lower case. In fact, it can't
hurt to use the braces regardless.
Example:

author = {I. M. Nobody},
title = {Silliness: Why {$\alpha\neq\beta$} Unless {$\Gamma$} Goes
Missing},
