Hi Jim.  I think you've done plenty!  Great stuff.

Sometimes you don't see issues one off.  They show up statistically because
a part has different tolerances and you only see the corner case
sometimes.  Chances are low that there is a lurking issue.  Youve shown it
works once so.. Probably ok.  But given all the installed devices are using
am29f800 one now does not have the benefit of all that user time if one
were to use the different part.

A conservative position would be to use the original parts and benefit from
the history.  I have been reluctant to make any changes to the hardware for
that reason.. if a problem shows up..was it the flash or the software?  For
example.

Next best... compare the datasheets line by line and decide if the
differences are important.  In this case...does it matter?  Probably not.
It is a hobby.

 Good to know another part works!!!!!!!  I myself having only am29f800
 would never have found out.
