In both the email and sms apps in Mobile accessibility, tapping and
holding the menu button on your phone will cause it to change navigation
modes. Depending on the app, tapping and holding once will change you
to words, again, characters, a third time depending on the app,
sentence, and so forth until tapping and holding one last time turns off
navigation.
