You mean you are not finding the US English Demo, is that correct? If not
try installing it.
Can you see / install the UK English Demo?
If you are not willing to install any other version, would it be possible
for you to just check if the following version are shown as compatible with
your device in google Play store.
1. MA US English Paid version
2. MA UK English Paid version
3. You said any other language, like German, appears in the search, but they
appear as compatible with your device?
What network services you are using with your Nexus 7? and do you have any
other android device? if so with what network services?
Lastly, can you check if you get access to any of the carrier's apps, AT&T
Mobile Accessibility, Wireless Accessibility for Sprint, or Verizon Mobile
Accessibility?

When I tried to do a search for Mobil accessibility in the play store for
the nexus 7 it gives me all versions accept for u.s English! Has there been
an update since Christmas or is there something I am not doing? I did
update to jelly bean 4.2 but I would like to try Mobil accessibility to see
if it would be easier to navigate.

Hello,
AT&T user should look for AT&T Mobile Accessibility.
Now the version include MA Screen reader so after installing AT&T Mobile
Accessibility go to your phone settings > Accessibility and turn on AT&T
MA and must turn off Talkback Screen reader. After doing the change, make
sure to restart your device.

the m.a. lite version with AT&T, does not work as a screen reader.
