If your pdf files are already text, and you just want a text version of the pdf, then just command-a to highlight the whole document, then open text edit, and paste in the text.
Thhat's all there is to it.
Of course, there's caveats (isn't there always)
First, the pdf file must be text, obviously images won't work. Well, more precisely, they will work, but you won't get text, just the image in question. Secondly, the pdf must not be protected, or the text won't copy. Of course, there's ways around that too, but those are off topic for this list, so won't be mentioned here. So, there you go, If you're wanting to convert pdf files with images into text, then you can use something like read iris pro (there's a free version, but there's other products too, as already mentioned in this thread.
