Hello Paul, To show the styles drawer, press Cmd-Shift-T. You then have to stop interacting with everything and navigate left or press VO-Cmd-T or VO-Cmd-Shift-T to find the next or previous table, depending on where you are in the window. You'll then find 3 tables: paragraph styles, character styles and list styles.
To get an idea of how to use Pages, listen to the VoiceOver On podcast dealing with Pages and Keynote.
