In the recovery partition (accessible via Command+R (and accessible with VoiceObver)), a table of options comes up. One of which happens to be Disk Utility. Running that option it now decided to let us format the HDD in the format we require. So now we are installing the OS as we need it. I have absolutely no idea, not a clue, not a hint of a suggestion as to why I didn't notice that before.
